Sparkling wines make a festive addition to any occasion, and now as tastes evolve, they’ve become a wonderful accompaniment to multi-course dinners with pairings at each course, or enjoyed by the glass, or two, with a full meal. Recent information on sparkling wine sales shows positive growth both in Europe and the U.S. and Treveri Cellars is crafting the crisp bubbly right in downtown Yakima.
Domestic producers are required to call Methode’ Champenois (French method), individually bottle fermented wines, “sparkling wines”, and avoid the label of “Champagne” as this is a region in France. The important thing to look for in domestically produced sparkling wine is the designation of Methode’ Champenoise or Methode’ Traditionelle on the label. Either of these designations show that the wines were individually bottle fermented, thereby producing a product that has significantly smaller and more delicate bubbles as a handmade product. Significant time and knowledge is required to produce these handmade bottles.
Best known of sparkling wines or Champagne is the Brut Blanc de Blanc or 100% Chardonnay sparklers. Sparkling wines made in France, typically consist of Pinot Noir, Pinot Munier and Chardonnay as a blend or on their own. Domestically, sparkling wines have been made from Riesling, Pinot Noir or Chardonnay, and now as they become more popular, are made with many different sugar levels and varietals….as is the case with Treveri Cellars.
Traditional sparkling wine sugar scale:
- Extra-Brut or Brut Naturale – 0-6 grams of sugar per liter (direst of the dry, unsweetened)
- Brut – less than 15 grams of sugar per liter (dry, this is the typical style of Champagne with little or no sweetness)
- Extra-Sec (aka Extra Dry) – 12-20 grams of sugar per liter (still dry with a hint of sweetness or slightly sweet)
- Sec – 17-35 grams of sugar per liter (medium sweet)
- Demi-Sec – 33-55 grams of sugar per liter (sweet)
- Doux – more than 55 grams of sugar per liter (sweetest, very rare and is considered a desert wine)
Classically trained with a degree in winemaking and sparkling winemaking, our winemaker Juergen Grieb has decided to introduce sparkling wines in the more “Sekt” tradition that he was schooled in while in Germany.
